BBQ Chicken & Pineapple, with a side of gardening...

So I've been in the mood to cook this week (yeah, I don't know WHAT has come over me???). Anyway, Tuesday evening I brined some chicken breasts (cut them up and everything! I was a little bit proud of myself :), then when Josh got home, he put them on the grill. I cut up a pineapple and that too went on the grill. Then, I peeled and chopped a sweet potato, red onion, red potato (with the skin) and fresh green beans. Put them all on a baking sheet, drizzled some Olive Oil, dashed a little Kosher Salt and placed some rosemary on top. That baked for about 25 minutes. Can I just say YUUUMMMMYYYY!! Oh my, it was a delicious combination. And the chicken, to die for!!

Well, I had a plan all along for the leftover chicken and pineapple. Here's what we did for supper tonight...

First, I sauteed red onion and bell pepper until fairly soft (I would add red pepper next time)...



The leftover BBQ chicken...let me just say, I had NEVER marinated my chicken in a brine before...I will NEVER NOT do that again! It changed the taste 110%! It was hard to not eat that stuff cold as I was shredding it :)

Leftover, grilled pineapple - without a doubt, one of the best fruits on the planet?! Who agrees???

Then I married them all in the saute pan...

Added a little extra BBQ sauce - I'm definitely a Sauce junkie. Whether it's BBQ, honey mustard, hot mustard, Heinz 57, ketchup or cocktail - I'm all over it!

And now for the mother of all yummy goodness - C-H-E-E-S-E!!! Can I get a "aaaahhhhhhhhh" melody going??

Get our your handy, dandy quesadilla maker - I would have also liked to have put this on the grill once it was done, or in the oven just to crisp it up a bit.

And the end result...Two thumbs up!! It was extremely flavorful, but you must like pineapple because the flavor is definitely a bit strong. Another addition for next time...a little crumbled up Apple Wood Bacon...doesn't that sound great??


And now on to the garden - This is my second year to maintain a small garden, and I must say, it's going pretty good!!

I've been wanting to try those since I saw PW did one similar with the pineapple. We never use our quesadilla maker anymore, it's actually in our yard sale pile...oops!

I saw the pop up on PW, but I didn't click on it because I wanted to try my own version first. I'm sure her's were a 100 times better though! We don't use our quesadilla maker nearly as much as Josh would like :)
