So this weeks pic was "Rice Casserole". It was good and on my rating scale, I give it 3 rolling pins...I think rather than the main dish (which is what I was hoping it would be), it's more of a side item, but at its best, it makes for a wonderful Fellowship Meal dish! Easy peasy. Here are some pics...


Here's the recipe:
5 oz pkg yellow rice
1 can mexican corn
1 can cream of celery soup (I used cream of mushroom)
1 stick butter
1 lb Jimmy Dean sausage (I used Tennessee Pride)
grated sharp cheese (I used 4 cheese blend)
Cook rice as directed and drain(if needed), add butter, corn (drained) and soup. Mix well. Cook sausage and drain. Add to mixture, mix well. Pour into a greased casserole dish, cover top with grated cheese. Bake at 350 until hot and cheese is bubbly.
This meal took approximately 30 minutes to make - Like I said, it was very simple and didn't take too many ingredients to make.
Alright, I let Josh randomly draw for next weeks recipe and he picked...
MILLION DOLLAR FUDGE!!
I have never in my life attempted to make fudge, but there's a first time for everything, right? Wish me luck!!

It looks VERY good. I will have to try this. Oh, and I can't wait for next week - fudge!!!
I used to help my mom make fudge during Christmas-time. She always used the "fantasy fudge" recipe on the jar of marshmellow cream. The hardest part is having to constantly stir so it doesn't harden. Good luck!
